Brussel Sprouts recipe

Roasted Brussel Sprouts and Young Potatoes

I found some purple Brussel sprouts at Trader Joe’s (a store we have in California) and mixed them with the regular ones.

Like all my recipes this is super easy and takes about ten minutes to prep.

Directions and ingredients

Preheat oven to 375

2 pounds Brussel sprouts with ends trimmed off and cut in half if they are large

place in glass or ceramic casserole baking dish

Mix in:

5 medium young potatoes sliced thin

3 cloves garlic minced small

½ medium red or yellow onion sliced small or you can use a half bag of ready cut Trader Joe’s onion if you don’t want to cry cutting up onions.

4 tablespoons low salt or no salt mustard

½ cup balsamic vinegar

Mix together and bake until tender, around 30 to 45 minutes

Can be thrown over rice or served with some re-heated beans or some braised tofu to make a complete meal. I make a whole bunch of this dish and eat it throughout the week.
